This is not a new topic, but rather a reference of work which I did nine years ago.

LM35 this is active sensor with highest measuring precision, but it is limited to environmental temperatures, for example you may measure refrigerator temperate up to a warm battery cell when this charging.
And it best performance this is delivery of actual room temperature.
(Due manufacturing design, this sensor its not as fast as is thermocouple wire, but it is stable.)

When LM35 sensor this is paired with one Oscilloscope, then we use best part of accurate time domain recorder, and we end up with a graphical data logger.  :)
